The recipe is actually flavored with pickle along with spices and masalas. So you can imagine how fiery and spicy the outcome would be. As traditionally in this biryani green chilies pickle are used but can be replaced with other variety of pickles . The aromatic rice when cooked and mixed with pickle gives a unique flavor to the biryani.

Ingredients
Meat 1 1/2 kg
Garlic paste 2 table spoon
Ginger Julien cut 1 inch
Cloves 7-8
Green Cardamom 10
Black Cardamom
Salt to taste
Curd 2 table spoon
Ingredients for Achari biryani Rice
Golden sella Rice ( double chabi )1 Kg soaked 2 hour
Bay leaf 4-5
Cloves 4-5
Cinnamon 2 inc
Salt to taste / 2 spoon
Water 3-4 Litres
1/2 tea spoon oil ( optional )
Achari Biryani Masala
Cinnamon - 3inch
Black cardamom– 1 nos
Green cardamom– 10 nos
Cumin seeds – 1 tsp
Star anise -1nos
Clove – 10
Nutmeg – ½
Mace – ½
Shahi jeera – 1 ysp
Coriander seeds – 1 tbsp
Red chilli powder – 1 tsp
Kashmiri Red chilly powder -1 tsp
How to make Achari Biryani Masala
1. Mix all the masala in the mixer grinder and make a paste.
2. Now add the red chilli powder and Kashmiri red chilli powder and grind it well.
3. Now Home made Achari Biryani Masala is ready. Keep it in an air tight container, you can use it for six months.
How to make Achari Biryani
Ingredients for Dum ( Covered Cooking)
Curd 300 Gram
Sugar 1 table Spoon
Orange Food Colour ( Optional )
Kewra Jal 1 spoon
Green Chilli Pickle50 Gram
Garlic Paste 2 Spoon
Ginger Paste 1 Spoon
Green Chillies 3-4 cut into Julien
1 inch Ginger cut into Julien
3 table Spoon Achari Biryani Masala
1. Boil the mutton in a pressure cooker with ginger pate, curd, garlic paste, green cardamom, black cardamom, cloves, salt as per taste. Mix it well, add water 500 ml. pressure cook it till 2 whistles depend on the mutton.
2. In a pot add the water when it starts heating up add salt , bay leaves , cinnamon , green cardamom , cloves and oil . Mix t well.
3. When the water boils add the rice and cooked it for 15 minutes or 70 to 80 percent.
4. Now check the mutton pieces and remove the mutton and stock, keep it separately.
5. Now take a bowl and add Yogurt , sugar, kewra jal and food colour mix it well.
6. In a pot add the mutton pieces, with a layer of mutton . spread the curd paste in the mutton . add Ginger and Garlic Paste, ginger Julien , cloves, green chilies, achari biryani masala
7. Now add a portion of rice with a layer of biryani masala, chilli pickle , add the curd paste again cover the rice again add a layer of rice with biryani masala, chilli pickle , add the curd paste and the stock , cover the rice again.
8. Cover it cooked it in medium flame for half an hour. After that mix it and Your Achari Mutton Biryani is Ready.
